Craft time!

I took down the final trace of Christmas today…IMG_0578 (Small)

By the time all of the holiday cards came in the mail, it ended up looking like a giant mass of randomness on our wall, but it started out as a crafty attempt to display our cards.

Stolen from/inspired by Martha Stewart, I started with my hot glue gun, the largest embroidery hoop I could find, some wide wired ribbon and two sizes of clothespins.  Hot glue was strung everywhere, and I burned many fingertips in the process.

I twisted the last bit of ribbon to hang it and started adding cards.  At first, we had so few I had to include my mom’s Thanksgiving card and our own holiday card. Eventually we had so many cards I had to add clothespins to the hanging ribbon, creating the holiday-card-blob seen above.

Now it is completely empty, but still on the wall.  I like the green ribbon because it was Christmas-y enough, but it also complements the white and yellow of our living room/entry way walls.  My next project is to find a handful of pictures to display here during all non-Christmas times.

I have been really bad at snapping shots of our culinary adventures, but there have been some tasty ones, and I promise I intend to get back to some regular posting soon.

Meat-Free Mal & Matt?

Matt and I are experimenting.  Our lunches are pretty much the same thing throughout the week—he takes a sandwich or a wrap with deli meat along with a snack of some sort, I take leftovers from the weekend.  On the weekends we like to indulge in lots of meat…for example, this past weekend we managed to eat two meats that come from a pig, one that comes from a cow, and one that comes from a bird.  It was delicious, but also very overwhelming.  It will make for wonderful leftover lunches throughout the week, and I had a wonderful time cooking up some new recipes and some old favorites.  However, meat can be expensive…especially if you are trying to purchase meat of any decent quality…and I find that the more meat we put in a dish, the less veggies we end up consuming during the meal. 

With our CSA box coming every other week and random cravings for vegetables lately, we came to the conclusion that we’d try to take our Monday-Friday dinners meat-free.  We made it through week one and are just starting week two.  The first week was pretty easy, since we had a crockpot full of sweet potato soup leftover to start us off on Monday, and we went out for Thai on Tuesday (Thai is one of the easiest cuisines to go meat free with).  Thursday, our planned risotto was a bust when I was off my feet with a lingering back pain and really just wanted a big plate of stir fried veggies…Buddhist Tofu from the Chinese place across the street it was (so delicious and simple!). 

However, I imagine it will get a little more challenging in the coming weeks.  To prepare for this, we started a list of things that we love that can easily be meat free. We have a long list already…and most of the things so far didn’t even come off of that list! One stipulation: we aren’t going to make meaty things with meat-like products….the point of this experiment is for us to eat more veggies, not to eat more fake meat.

This is a dish we actually made a couple weeks ago, but I just realized that it’s not one that’s on our list…adding it now!  I first made this before Christmas for a couple friends and it might be the new favorite Italian dish in my repertoire.   Special thanks to our Kentucky friends Bob & Shannon, who sent us two jars of homemade marinara sauce.  AMAZING.  We still have one left because I want to save it as long as possible.  We shot through the first one with this dish and then a mini-meatball sub and salad dinner a couple nights later. 

Zucchini Parm for Two

  • 1 large zucchini sliced lengthwise into four strips
  • 2 Tb flour
  • 1 egg, beaten
  • 1/2 cup seasoned breadcrumbs
  • marinara sauce
  • a handful of your favorite italian cheese
  1. Heat 1/4 inch vegetable oil in a deep pot over medium heat
  2. Bread each slice of zucchini by dusting in flour, dipping in egg white and then dredging in breadcrumbs (you could also use cornmeal and it would probably be amazing)
  3. Fry in hot oil, about 2-4 minutes per side, depending on heat of oil and thickness of zucchini.  Flip when crust in deep brown in color.
  4. Drain on paper towels.
  5. Place zucchini slices in a small baking dish in one layer.
  6. Top with marinara and cheese.
  7. Broil or bake until sauce and cheese are hot and bubbly.

I served with roasted broccoli and shallots and some orzo tossed in some additional marinara (which I was eating right out of the pan while waiting for the zucchini to fry…very classy).

This is ridiculously easy and made a fun and easy dish to serve to company.

Bacon, Two Ways

Bacon was on sale…good, center cut bacon. What can I say…I had to take advantage.  Instead of having an insane amount of bacon in one meal, we broke it up into a couple co-starring roles.  The first was an accompaniment to a really interesting concoction. 

We had (still have) a ton of lentil tomato soup in the freezer.  A really hearty, yummy soup that we happened to make four thousand gallons of the first time around.  Instead of just eating as soup again, I rubbed down a couple chicken thighs with a spice rub and let it sit while we were at work, then tossed it in a casserole with the soup.  It looked like a big dish full of…well…nothing good.IMG_0682 (Small)
I baked it at 350 or 400 degrees along with some roasting root vegetables, using my wonderful meat thermometer to know when to pull the chicken for maximum moistness. When it came out of the oven, it looked…well…like a big dish full of baked nothing good.IMG_0686 (Small)

Where’s the bacon!?! That is what you may be asking.  Well…here it comes!

Chop up some bacon, crisp it up and drain almost all of the fat.  I had that amazing center cut bacon, so there wasn’t all that much fat in the pan anyway.  IMG_0687 (Small)

Chopped onion gets sautéed in a thin layer of bacon grease, and then frozen peas (a little too frozen apparently) get added with a little chicken broth and cooked down.  I usually make this dish with a little bit of cream or half and half at the end (and usually with Brussels Sprouts), but I had some plain yogurt on hand, so that went in.  Not quite as creamy, but added a little tang and a lighter feel to the side dish.

Bacon made another appearance at breakfast.  This was a huge success.  Take note.

Repeat the bacon cooking and onion sautéing above.  Fry some tiny diced potatoes in with the onions and toss in a chopped tomato.  Take this all out of the pan and lightly scramble eggs to your preference.  For a soft scramble, just before the eggs are completely cooked, fold in the veggies and some shredded cheddar cheese.  AMAZING breakfast.  Thinking about it to write this post makes me want it again!

Keep reading for a mini-guest post from my mom with a hard-core apple themed meal!

I am light on meals to post because Matt was out of town all weekend and I didn’t do a ton of cooking. Tomorrow or Thursday I’ll be posting a more successful version of my fried rice…Soy Squared Fried Rice.  Stay tuned!

Ok, on to mom…a little info first.  My mom is hilarious and has recently been getting really creative with her food! So when she sent me some pictures of her Sunday dinner this weekend I told her I’d feature it on my blog if she sent me a post to go with it!  Mom doesn’t have a blog (sad, but true), but she does have an Etsy site that is great! Guess who designed the banner??? 😉 As I wrote about before, she crochets like crazy and everyone in the family has piles and piles of afghans to show for it.  This is spectacular!  I love afghans, and Santana loves to dig them (maybe I will try to get a video of this sometimes), so it’s good that my mom keeps cranking them out!  With her surplus of afghans, she’s created Crochet By Shelly, where you can buy your very own, spectacular, hand-made afghan from my mom! All proceeds go to benefitting my mom make more afghans! I think she’d probably be up for suggestions or requests if you had a particular pattern or color that you wanted…we haven’t quite figured out the Alchemy section of the Etsy site, but there’s a way to do this! On the roast, I don’t really have a recipe..

I browned it (peppered) with olive oil on all sides on the griddle since it was out from making grilled cheese last night. Chopped up a good size onion and placed in bottom of crock pot after adding some season salt.  Had some small carrots and threw some in.  Placed the roast in.  Added the rest of the carrots.  Put some apple butter (Mallory’s note: My mom makes this from scratch in the Crockpot!! I have the recipe and plan to try it soon…expect a post about it!) on the top.  Threw in some beer (surprise – it was the handy liquid and didn’t feel like opening up stock). Turned the roast once and added some more apple butter and some water.  Too much liquid now, so I took some out and put in a pan to make gravy with later. Have no fresh potatoes so I add a can at the end – you know those cans dad always has in the cupboard for chili. (Mallory’s note: these cans of potatoes are SO handy! Not fresh potatoes that you want to eat on their own, but great for soups or random things like this.)

We don’t have a picture of the final product all plated up, but Mom’s new to this blogging thing, so we’ll let it slide…if she sends one later, I’ll post an update! 🙂 She said the pork was AMAZING and you could taste the apple butter all the way through. Yum!

PIE:

  • I’m weak – use Pillsbury dough.
  • ¾ cup sugar
  • ¼ cup flour
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon

Mix that stuff  ( I put in a little more because I over stuff it so when it cooks down – dad still has lots of apples).  Add the apples sliced.. the recipe calls for 6 – but I use the whole bag from the store… When the seasoning is right and I don’t’ have to buy at the store, I will guess how many.  Mix apples with above.. put in crust (don’t grease pan).    Cover with other crust.  Do the sealing, fluting and all that good baking stuff.  Add some slits to top crust to let the steam escape.  Cover with that crazy thing to keep the edges from burning… remove 10- 15 minutes before done.

425 – 40-50 minutes.. 

Serve over vanilla ice cream!

Still in Oregon…at least today’s fair was only 15 minutes from my hotel, so no crazy morning driving like the last couple days!  Yesterday’s lunch was SO GOOD (for a catered lunch at a university anyway).  Veggie trays, salad, Black Bean Corn Fiesta Rice, 5 choices of wraps (I chose chicken Caesar, because I’m predictable), cookie trays, lots of drink choices! Yum! The wrap was one of the best chicken Caesar wraps I’ve had….it was basically a chicken salad type filling, made with Caesar dressing instead of mayo, with some onions, and wrapped with some really nice red leaf lettuce, all on a tomato wrap.  So good! I spread my lunch out throughout the day because the fair was 6 freakin’ hours long.  I got some work emails answered and other random things done in the chunks of time when I wasn’t talking to prospects, so it was a pretty productive and yummy 6 hours all around.

Because I had the salad and the wrap for lunch, I wasn’t in the mood for a sandwich or salad from the organic place next to the hotel, so I walked 15 minutes or so down the road to a Mexican restaurant.  I munched on chips and salsa and ordered a small combination plate with an enchilada and tamale along with rice and beans.  Decent Mexican, not the best, not the worst.  Very satisfying.  I also ordered a small melon margarita…YUM! Piece of advice: DO NOT HAVE A FILLING MEXICAN MEAL AND A MARGARITA KNOWING THAT YOU HAVE TO WALK AFTERWARDS!  It wasn’t a long walk, and I called Matt on the way, but it was hot and my tummy was full, and I just wanted to be back in the hotel resting!

Are any of you looking for afghans?? It might be getting warm now, but think of how chilly you get in the middle of January!  Well, my mom crochets like a fiend and makes tons and tons of afghans…she constantly has at least 2 or 3 going.  Anyway, I showed her the Etsy website and she put some of her afghans up for sale.  Guys, I have SO many afghans right now.  They’re amazing and they last for a long time (unless you give them to Santana, who digs digs digs them and they get full of puppy fur).  She is still working on getting her Etsy shop all set up, so it’s bare bones basics with pictures of the afghans she already has done right now, but more to come! So if you’re looking for a homemade gift or a cuddly throw for your own couch, show my mom some love!
